Susan's No-Bake Strawberry Cheesecake Bites
  • 1 lb fresh strawberries, rinsed and patted dry
  • 8 oz softened cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/3 cup crushed graham cracker crumbs


Susan's No-Bake Strawberry Cheesecake Bites Recipe
Summer is in full steam so no-one wants to run the oven - so let's put out a cheesecake that doesn't require any baking! Today we're talking about Susan's no-bake strawberry cheesecake bites. These bites are perfect for a cookout or a picnic but do require some "chill" time so make sure you budget the time needed.

The first thing you'll want to do is take a pairing knife and remove the strawberry stems and cores to hollow out room for the cream cheese filling. In a medium sized bowl, add the softened cream cheese, vanilla and powdered sugar. Beat the ingredients with an electric mixer on low until the filling has reached a smooth, fluffy consistency.

Put the filling in a pasty bag (or a zip lock bag - hint: cut a corner for easy filling) and fill the individual strawberries until each is slightly overflowing. Rest the strawberries on the tray in preparation for putting them in the fridge to chill.

Sprinkle a pinch of graham cracker crumbs on each strawberry for garnish and put them in the fridge. Let the treats chill for at least one hour before serving!
